02 | THE PHILOSOPHY OF ITALIAN COOKING 🇮🇹
Italian cooking isn’t about having everything. It’s about knowing what to do with what you have.

One of the things Chef Raine and Mark came away from Italy with was a deeper appreciation for the philosophy behind Italian cooking. Not just the recipes, but the way Italians think about food.
For generations, Italian cooking has been shaped by place, seasonality and necessity. Cooks worked with what was available close to home. They went to the local market, bought what was fresh, used what they had and found ways to make simple ingredients into something satisfying.
There wasn’t an endless supply chain delivering every possible ingredient from somewhere across the country. The pantry and the market determined what was going on the table.
And some of Italy’s most beloved dishes reflect that history.
Carbonara is often associated with wartime scarcity and the idea of making a meal from a handful of inexpensive, readily available ingredients. While the exact origins of the dish remain debated, the story illustrates something fundamental about Italian cooking: great food doesn’t require a long list of expensive ingredients

It requires knowing how to use what you have.
That’s a philosophy that resonates in the Victor’s kitchen, too.
Chef Raine returned from Italy with a renewed appreciation for letting ingredients lead the dish rather than trying to make the dish do too much.
Start with what’s good. Respect it. Use it thoughtfully. And make something memorable.
That’s part of what Italy taught us.
